TMH Approved Chicken Salad

This is the easiest protein-packed quick lunch out there! Sunday I slow cook organic chicken breast in bone broth, shred it, then make this for the week! I eat it with GF crackers or a lettuce wrap.

Ingredients

1 1/2 lbs organic chicken breast (or roughly 4 cups cooked, shredded)

2 TBS Avocado Oil (olive oil is fine since this isn’t heated)

1 1/2 C halved organic grapes

1 C thinly sliced almonds or chopped pecans

3 thinly sliced green onions

2 TBS chopped fresh dill

1/2 C Primal Kitchen Avocado Oil Mayo (Or make your own!)

1 C Greek Yogurt

Juice of 1 organic lemon

1 tsp Redmond Salt

1/2 tsp ground black pepper

I also love adding Trader Joe’s Onion Salt and Chili Lime Powder to taste!

Instructions

Toss it altogether, serve with GF crackers! ;)
