Sweet Potato Shepherd’s Pie

Ingredients

2 LBS grass-fed organic beef

1 bag frozen peas and carrots

1/2 white onion, diced

1/2 green pepper, diced

3-4 large sweet potatoes

1 Can coconut milk

2 cloves garlic, minced

Paprika, Onion Salt, chili powder, really any spice you like to salty/spice off-set the sweet potatoes

1/4 carton beef broth

Instructions

Sauté beef, onion, pepper, garlic, spices

Boil sweet potatoes (I left skin on)

Add in peas + carrots + spices + beef broth to beef mixture

Beat potatoes + add in a can of coconut milk

Layer Potatoes on bottom, add beef mixture, then potatoes on top.

375 for about 30-40 minutes
